My family loves fried chicken, so when I saw something similar done on Biggest Loser, I had to try it. It's a great alternative to "fried" chicken.

My kids eat these as fast as they come out of the oven. My hubby even eats then and he does not like raisins! Glade they do not know that they are healthy for them!

So very moist and NO ADDED eggs or oil!
Obviously mayo is made from eggs and oil. Also, I use Hellman's (Best Foods) Light Mayo but it is still pretty healthy with regular. Moistest cake ever though. The family loves it. For real decadence frost with Sander's Frosting. YUM!

My family loved this! It's my own low fat version of the chinese dish. I served it over rice and with frozen egg rolls. Kind of high in sugar....but low in fat. Hope you enjoy!

This recipe was adapted from one of my mother-in-laws family’s favorite recipe. I only substitutes applesauce for the oil. It makes a deliciously moist apple cake.
