Cauliflower Salmon Bake

A low carb, but fairly high fat, version of my lower calorie Salmon Cauliflower Bake,
Can be made ahead and reheated.
The carbs could be reduced even further by replacing the milk with 1 1/2 cup milk and 1 1/2 cup chicken stock.

Chicken Vegetable Pasta Bake

A lovely vegatable pasta bake that makes a complete family meal.
Can be made ahead and reheated
Sweet potato could be used instead of pumpkin, or pasta,
the sauce variety can be varied according to personal taste but any changes to the ingredients would mean the nutritional values would need to be re calculated.

This is really a cross between a soup and a stew
It is a really cheap dish that easily feeds a family but takes time as the oxtail has a lot of fat and if it is not allowed to chill overnight and then the fat removed, the calorie value and fat content will be sky high.
The final taste is worth the trouble though.

A tasty meal, quick to prepare, that looks colourful and is low calorie. It can be eaten hot or cold.
Its really good served with a sauce (I use Avocado Sauce, but a cream and wine, or tomato sauce would be as good - depending on your preference.

Use any 400g can diced tomatoes with no added salt or sugar.
