This is adapted from a recipe in the book by Dean Ornish 'Everyday Cooking with Dr. Dean Ornish'. His recipe calls for 2 egg whites and I just add 1 whole egg.

This coffee cake recipe has been in my family for years. It is always a hit. You can lessen the calories and fat by using nonfat or light sour cream. I have not tried substituting any other ingredients, it's too good the way it is. Great for dessert and great for breakfast!
I have made this in two 8 x 8 pans and it is just as good!

St. Hildegard's Cookies of Joy
Incredible! 5.0/5

(Recipe reconstructed and adapted from Hildegard's circa 1157 treatise Physica: Liber Simplicis Medicinæ ) These biscuits were first made over 900 years ago by the Christian saint, Hildegard of Bingen. She said that these spice biscuits should be taken t regular intervals to increase joy and positivity! I like to substitute half of the plain flour with spelt flour, and use all organic ingredients.

Might sound like a strange combo but these muffins are moist and delicious without being sinfully bad for you. The original recipe calls for coconut instead of oats. Walnut are also optional but are included in the nutritional count for this recipe.
