Lots of dicing required because fresh veggies are awesome. I never thought I would say that... considering all my life I've only eaten green beans and peas. But this has 7 different veggies in it and I LOVE it as I'm trying to learn how to eat more vegetables. It also stretches the volume of the rice so you end up with 8 1 to 1 1/2 cup servings instead of the 1/2 - 3/4 of a cup if it were just the rice.
I use Nishiki (sushi) rice to make it a little softer and stickier... that way I can enjoy it with half brown rice.Submitted by MLHENDRICKSON
