When I made this it was with 4 very large chicken breasts from our local butcher. One breast was big enough to feed 2 people just to give you an idea on how to modify recipe to fit normal hand sized breasts.
I also check all of my ingredients for the lowest calories and fat so make sure you do that as well or else you will be adding a lot more calories and fat to this recipe!

Once you make homemade cream cheese, you'll never enjoy it from the store again (unless you get it from a local deli ;-)
You can use reduced fat but I don't think it's worth sacrificing the taste of regular. Especially since it's packed with yummy, healthy veggies: 1 oz of this has a lot less calories than 1oz of just plain cream cheese right out of the package. If you want to cut back even more...just throw in more veggie...or add some other varieties you like along with the ones above.
