Very flavorful and filling for not too many calories. Using hull-less barley (as opposed to the processed "pearl barley") increases the fiber and protein content of this soup and qualifies as a "whole grain." Cooking time increases a bit more because of this - but soaking the barley in warm water helps reduce that time. Enjoy!
I found this in an old Suzanne Somers cookbook that I love. I believe it is her first cookbook. I love all her old recipes.
Serve this over hot whole wheat pasta! yummm....
