I just made this tonight. It is based on another sparkpeople recipe that I found that used chicken. Since I'm living in Europe it was hard for me to follow exactly, so I made due and it came out great.
I figured that I would post it because I am assuming that many people have post-thanksgiving turkey that they will be trying to do creative things with for the next couple of weeks, so this is a healthy, delicious, high-protein option. Enjoy!Submitted by GUITARGAZM
WOW! Only 55 calories per serving and still so delicious! This recipe is SIX ingredients and HALF an HOUR. Perfect for a speedy lunch or dinner and you'll still have some left over for later (unless you eat the entire pot, which would still be only 330 calories).Submitted by STEPHSTEAR

We raise our own tomatoes and I was going to have just the tomatoes in the oil & vinegar but decided to add celery and cook. Looking at my Nutrition Tracker I needed to add calories and protein.
