1 Rinse the quinoa thoroughly and drain.
In a medium-size saucepan, bring the stock to a boil, stir in the quinoa, and return to a boil.
Lower the heat and simmer, covered, for 20 to 25 minutes or until all of the liquid has been absorbed.
Let stand for 5 minutes, then transfer to a bowl and stir in the onion, red pepper, cucumber, and herbs.
2 In a small bowl, combine the orange juice, vinegar, orange rind, salt, and black pepper and whisk in the oil.
Pour this dressing over the quinoa and vegetables and toss well.
