Beef stir fry I make, using cut up stew meat, fresh veggies, a bag of Kroger Stir Fry with noodles and Kroger Stir fry seasoning mix (made with soy sauce, sugar and water). I use around 2/3-3/4lb of beef to cut down on cost and add in extra veggies so that there is enough to feed my family of 6.Submitted by KELLILVN
Quick meal to make. Low calorie, high protein, high fiber.
TIPS: Adjust the ginger and garlic to taste. I use Rotisserie turkey or chicken breast to make preparation quicker. Also, you could buy a package of 'cole slaw' mix for the cabbage. Brown rice can be substituted for quinoa. (Quinoa cooks faster and gives it a great taste plus it is high in fiber and protein). Avoid white rice though as you lose the benefits of the whole grain.
You can also add shredded carrots, peas, snow peas, water chestnut, or other veggies that you enjoy in stir-fry but you don't need heavy oils or soy sauce. Submitted by STARLASUE

This is adapted from a nearby Asian Bistro of which Tofu Thai Red Curry is my favorite dish. Serve it with brown rice and it's delicious.Submitted by FIRMJUNKIE
