From Taste of Home Comfort Food Diet Cookbook - we made this tonight and it was really tasty and filling. The recipe called for 3 medium peeled potatoes but all I had was small red potatoes, so I used 6. I left the skin on them, since the red potatoes have a pretty thin skin.
