Simple Low carb Sloppy Joes

This is the way my mother always made Sloppy Joe's.
My cousin's kids thought it was the best ever, (after always having the kind made with can type or veggies or beans hidden (they knew) that they didn't like. Makes it low cal enough you can still have other things and be in the 300 cal range for a meal. Submitted by MSTEMM1

Large Batch Meat ball, meatloaf, and mini-meatloaf mixture

I have 4 boys, who always seem to be STARVING. Plus we homeschool all of them. So I make as much food in advance as I can manage. With this mixture, you can make meatballs, meatloaves, min-meat loaves and use them as a main dish, with pasta, on sandwiches or grinders - and the smaller portions defrost quickly! I usually make one full-sized meatloaf, a 5 - 7 dozen meatballs, and a couple dozen mini-meatloaves - we eat the big meatloaf the first night, and I freeze the rest after cooking, to be used later.

Red Dirty Rice & Beans

Or try adding a can of Ro-Tel or other diced tomatoes with hot peppers instead of plain diced tomatoes.Submitted by CASERET
