This starts with a Betty Crocker cake mix, but I used applesauce and egg whites in place of oil and whole eggs to cut the fat and calories. Not a health food, just a healthier carrot cake variation. Makes a light and sweet cake.
I use this cake to make all kinds of filled cakes for birthdays and such. My oldest grand daughter loves my Chocolate Covered Cherry Cake. I fill between layers with Wilderness Lite Cherry Pie Filling and frost it with my Chocolate Velvet frosting.
