orange zuchinni cake

This recipe is super easy . The ginger, cinnamon and the orange zest give this cake some zing; while the zichinni and the orange juice keeps it moist and delicious. EnjoySubmitted by BETTERMIX

Modified Steph's Chocolate Almond Butter

Took Coach Steph's recipe and modified it. Cut the chips in half and used dark chocolate chips at that. This was plenty sweet and made a great icing on some cup cakes.Submitted by CALIDREAMER76

Low Carb Choc-Mint Cheesecake

For my 24th birthday, I wanted to make a new (to me) kind of jelly cheesecake - mint! All the fruit flavours of sugar-free jelly were boring me, so I decided to experiment with peppermint oil... Worked a treat!Submitted by JEZWYN

Summer's Candy Pasta

This is a taste of Italy in a bowl, and a perfect accompaniment to simple grilled chicken or fish! If you're short on time during the week, make the roasted tomatoes in advance and refrigerate (covered) up to 3 days.Submitted by JO_JO_BA

Gold Brick for a Belated Birthday
Gold Brick for a Belated Birthday

Don’t worry about the name of this cake… though it is a golden pound-cake style of dessert, it is by no means as dense as a brick, nor does it contain any eggs! This is the second product of my birthday / Christmas gift baking bonanza for my best friends James and Heather, whose birthdays I missed due to their school schedule and my Thanksgiving plans. This is James’ present, a rich, tangy lemon loaf cake with a light drizzle of raspberry icing. Again, a dessert I would love to have any time, if only my health would let me!Submitted by JO_JO_BA

Deep Dark Chocolate Cheesecake

Definitely NOT a diet dessert - but a winner for my mom's birthday party! With 24 oz of cream cheese, a cup of mascarpone and 10 oz of bittersweet couverture chocolate you can definitely count me in! Submitted by JO_JO_BA

Poached Chicken and Pea Salad with Almonds and Edamame
Poached Chicken and Pea Salad with Almonds and Edamame

Poaching instead of roasting or sauteeing the chicken for this salad keeps the outside soft, allowing the crunch to come from the almonds and sweetness from the snow peas and edamame. Chicken thighs are an equally lean choice without the skin and are higher in iron than the breast meat. While this is excellent warm, leftovers are just as good the next day and are great stirred into rice.Submitted by JO_JO_BA

Fudgy Pound Cake
Fudgy Pound Cake

This is easy to make, and uses ingredients most of us already have on hand. You can even make a double or triple batch of this rich and moist cake, storing extra loaves in the freezer. Just wrap in plastic wrap then foil - they keep up to 3 months and are great Christmas gifts! Submitted by JO_JO_BA
