This is a recipe I adapted to lower the fat and calories (and prep time) by leaving out the crust... my husband said it was great and would eat it again, he liked it so much he ate two portions! It also keeps well in the fridge for a few days and reheats well in the microwave, so makes a great quick, filling breakfast! Could easily substitute ham for any other ingredient (such as veggies) to lower fat and calories further.Submitted by TOOBUSYTODIET
