I hate having to convert recipes for two people, so I'm tying to create and add more recipes for those cooking for two. These are a modified version of the Strawberry Pancakes: Un-chained Recipe (I added cinnamon and vanilla extract and simplified the flour to one type). These are very flavorful - add whipped topping or drizzle with your favorite syrup (not included in recipe) but they are also great plain!
