I use unsweetned applesauce in my muffins and a banana to give them moisture as well as a bit of extra vitamins and good stuff :DSubmitted by AFROCENTRICPOE
Making attempt to get granola under 200 calories per 1/2 cup. This is a good recipe with plenty of flavor, even while cutting down on the fat and nuts. I added the flax seed in the last 10 minutes of baking, as I have read that heat destroys the nutritional value. Eliminating the flax seed would save 23 calories per 1/2 cup. Eliminating the coconut would save 16 calories per 1/2 cup. Adding another 1/2 cup nuts would add approximately 20 calories per 1/2 cup. You can use any dried fruit equal to 1.5 cups for the same calories. Bake on two pans, but watch for too much browning if you leave it too close to a heat source. Try to get both pans near the middle of the oven and switch from top to bottom rack when you take it out to stir. Submitted by REASONABLEDIET
Great, tasty muffin. For my diet, I find that this muffin with yogurt and/or fruit in the morning is a great strart for the day! Kids absolutely LOVE it with cream cheese frosting on top (like a cupcake). Double the recipe to make it into a cake. (2 layers / 9 inch circle OR 9x13 sheet)Submitted by TAMATHAK1
Great to Make and Freeze - Have a Slice for a Quick Healthy BreakfastSubmitted by TAMATHAK1
This is apparently the secret to having healthy bowels. Made them last night with a few modifications. I used pumpkin (you can use any fruit puree instead of apple sauce) threw in some oat bran instead of the full flour called for, and used greek yogurt instead of low fat yogurt or buttermilk, just to make it healthier. Apparently one every day for breakfast and your bowels are perfect. Submitted by ADGRAHAM
