Really tasty. Base can be used as low fat batter for other fruit and nuts. I use whole ground spelt flour since it is whole but less heavy than whole wheat. Regular flour was what the original recipe called for. You can also add 1/4 cup candied orange rind. Submitted by OCEANGLOW
1/3 cup uncooked wild rice (1 cup cooked)
Pastry for 10 inch one crust pie
½ pound turkey ham or regular ham, cut into ¼ inch cubes (I only use ½ cup)
8 ounces (about 2 cups) shredded Swiss cheese (I only use one cup)
2 Tbls butter or margarine (I use light olive oil)
3 green onions, including tops, minced (I used the entire bunch)
½ large green pepper, diced
1 tsp minced garlic (I use garlic that comes already minced in a jar)
4 eggs (I ended up using 6 eggs; depends on how deep your pie pan is)
1 cup whipping cream (I use half and half)
Fresh ground pepper and Christmas Point Wild Rice Seasoning to taste, or Old Bay Seasoning, or Greek Seasoning.

I combined a conventional muffin recipe with a coconut flour recipe to add more fiber and a bit of protein into muffins. Worked pretty well. Still has wheat & gluten.Submitted by HEALTHY_CATH
