Banket (Dutch Almond Bars)

A "Dutch" treat, usually made around Christmas (when almond paste is available in our stores). We also buy the paste and freeze it so that we can make banket for our school auction in April.
Need 2 days to make this recipe. The 1st 2 steps takes only about 15-20 minutes. The second day takes about 15-30 minutes depending on how good you are at rolling out dough. Cook time is 20-30 minutes.
I never realized before how many calories are in one little piece. I've learned that I will have to eat this in moderation instead of eating half a stick (or a whole) at one sitting!!

Date walnut cake

Using canola oil instead of butter and egg white liquid instead of whole eggs, I guess its a very tasty and healthy recipe for a good snack

Best Ever Crustless Sweet Potato Pie

This pie will knock your socks off! I make it without pie crusts to save LOTS of calories! Recipe makes two pies, six slices per pie. You can, of course, cut it into eight pieces, but it's relatively healthy, so why bother? A nice Christmas alternative to yet another pumpkin pie! Better texture than pumpkin, and you only need three sweet potatoes for two pies!

Gift Giving Fudge

This is the absolute best tasting fudge in the entire world. I do not use low fat ingredients for this one. If you want a low fat fudge try my Chocolate Cream Cheese Fudge.

10 minute Chocolate Fudge

This only takes 2 minutes in the microwave and tastes decadent! You can add nuts, peanut butter, marshmallows... The nutritional information here only include this basic recipe from Kraft Food and Family.

Carol's Rum Balls

Crush vanilla wafers in plastic bag.
Mix in Rum, Powdered Sugar and corn syrup until the vanilla wafers are moist
Stir in Chocolate chips and chopped pecans (to taste)

Put in refrigerator several hours or overnight to harden. Then roll into balls about the size of a melon ball and lay out on waxed paper. Sift Powdered sugar over top and roll balls around in excess sugar to fully coat.
