A Wonderful Thought!

"The Gluten Free Peanut Butter Cookies are just yummy!! I added chocolate kisses and even mini Snickers to make them too good to pass up!"

"Wow, what a great site. I just wanted to say thank you for this site and all of the information you have available."

"I magically found this site just in time for Christmas. It went right into my favorites! Thank you for the wonderful recipes and tips!"

"i think this site is just brilliant!! That's alllllll..... Thank you for the wonderful recipes."

"I'm the baker in my office and I love to bring treats on Monday morning. December was no-holds-bar baking month and now everyone is joking around and blaming me for their extra tummy pudge last year. The first Monday this month, I made your gluten-free peanut butter chocolate chip cookies. They were a huge hit and everyone was surprised to find out that they were gluten-free and low fat. At about 4g of fat and 65 calories per cookie, everyone ate them up and are demanding more. I love your website and I look forward to trying all of your cookie recipes, Thanks."

Iron - Rich, Gluten Free Vegan Muffins

These are gluten free, naturally sweetened and nutritionally dense muffins with a light crunch from sunflower, chia and flax seeds and a nutty note from cooked quinoa. If you don't like the banana in the recipe, use 1 cup of pure pumpkin puree instead - it will be a delicious switch-up!Submitted by JO_JO_BA

Ginger Gingerbread

This gluten free, vegan bread is adapted from a recipe made by The Blackbird Bakery in Austin, TX in the new book, “Blackbird Bakery Gluten Free”. While the list of ingredients is a long one, each part of the mixture is key to maintaining the texture and promoting the unapologetically gingery flavour of the cakey tea loaf.Submitted by JO_JO_BA

Date Fudge Filling

Adapted from Back to Her Roots, this creamy, thick and sweet chocolate fudge-like mixture is perfect for filling cookies, whoopie pies, or (my favourite) making your own filled chocolates for the holidays! It's sugar free and even gets a boost from maca powder for extra nutrition and flavour.Submitted by JO_JO_BA

Shoofly Cracker Pie

Saltines make an unusual but refreshingly salty base for the fairly cloying sugary shoofly pie filling in this recipe. It makes a 6" pie, which is good because it's SO rich!Submitted by JO_JO_BA

This is an authentic San Marino dessert cake, studded with a variety of fruit. In the past it was cooked not in the oven but in the fireplace " between two fires" which means in a heavy copper pan, which had a concave lid in which live hot coals were placed so it had heat from above as well as from below. It is intended for serving in small pieces along with a sweet dessert wine.Submitted by JO_JO_BA
