Gluten-Free Sweet Quinoa Cornbread

This is a delicious, moist sweet pumpkin-based cornbread - good to serve with a spicy chili or bean dish or have for breakfast with a dab of jam. Adapted from NourishingMeals.comSubmitted by JO_JO_BA

Spicy Tomato-Chili Coulis
Spicy Tomato-Chili Coulis

This simple, slightly sweet puree of tomatoes and hot peppers packs some SERIOUS heat... I wouldn't recommend it alone for pasta, but it adds a great zip to macaroni and cheese sauce and works wonders stirred into rice! Serving size is 2 tbsp.

A note about the tomatoes: normally I'm not a stickler for the seasonal / local thing, but when it comes to this sauce, it matters. You need them to be picked at the peak of their ripeness, flavour and nutrition, not crunchy like storebought tomatoes.Submitted by JO_JO_BA

Grape and Ground Cherry Crumble Pie

This is a traditional Mennonite dessert that I found in a box of paraphernalia from the St. Jacob's farmers market. I grow both ground cherries and grapes, so it seemed like a unique way to use them that wasn't jam!Submitted by JO_JO_BA

Power - Packed Vegan Chili

My latest creation for the fiance to take with him to work, with 25% of the RDA for protein in the form of beans and quinoa (a super-yummy whole grain!). Throw in some stout beer and a dash of cocoa and a very filling, flavourful meal is yours! Submitted by JO_JO_BA

Rich Roasted Veggie Stock
Rich Roasted Veggie Stock

A basic, yet intensely flavourful recipe that forms a delicious bottom note for any vegetarian (or not!) soups, stews or rice dishes you care to make with it. Comes from the Fresh at Home cookbook by Ruth Tal Brown and Jennifer Houston. Makes about 8 cups, each about 10 calories and no fat (the nutrition calculator does not take into account the fact that the vegetables are strained out).Submitted by JO_JO_BA
