My daughter LOVES this coffee cake and she doesn't even like cake. It's so simple to make that you have most of the ingredients in your cupboards. Higher in fiber and protein than comparable cookies, and lower in fat. Recipe taken (and modified) from the box of Zoom hot cereal. I used a mixture of butter and smart balance for the 3/4 cup of butter because that was what I had on hand. The nutrition values reflects this.Submitted by MUDDER91
Mrs. Mudry would make these delicious little treats for many holiday parties at our church (St. Nicholas Byzantine Catholic Church in Danbury, CT). As a child, I looked forward to "Mrs. Mudry's cookies". The cookies are often filled with any of the following: ground walnuts, lekvar (pureed prunes), apricot preserves, or any other (thick) fruit preserve. (Solo brand fillings work very nicely.)
