This recipe is from Ellie Krieger from Cooking Channel. I adjusted the recipe to what we had, please see teh cooking channel website for the full recipe. I altered it to serve two for our Valentines day dinner.Submitted by RACHELRN4
A yummy quick sweet treat for the lactose intolerant. There's a little milk in the chocolate chips but that's the only dairy! A good dessert for the vegetarian too. Submitted by RACHELRN4
The banana part of this recipe came from March Health magazine. Added the vanilla frozen yogurt for a nice treat!Submitted by RACHELRN4
Nice creamy peach flavor. Great way to stay on track when you crave ice cream. No ice cream maker required. I froze it in ice cup trays for portion control and quicker freezing. There is nothing like the fresh peach flavor. You can probably substitute other fruit for the fresh peaches.
Possible substitutes I haven't tried yet are using
Lowfat yogurt for Buttermilk
Splenda for sugar
Other fruit for peaches

1. Preheat oven to 350 degrees. Line muffin pan with paper liners.
2. Cream the butter and sugar with a mixer. Add eggs and mix well.
3. Dissolve baking soda in the sour cream. Let it "rise" for a minute, then add it to the butter and egg mixture. Mix well with beater on medium speed. Add bananas and blend in.
4. Add flour and baking powder together. Mix in thoroughly, but no longer than necessary. Add vanilla. Stir in chocolate chips by hand. Fill muffin cups. Bake for 25-30 minutes. Recipe makes approximately 1 1/2 dozen.
