Jen's spaghetti sauce

I never make out of the can sauce I always have to liven it up a bit. I also like using fresh basil and squash but didn't have any this time around. We normally serve over spaghetti squash to keep the calories low.Submitted by JMBARUT

Vegetarian Taquitos

Corn tortillas and refried beans give this dish a fair amount of fiber, and lots of micronutrients. Dip in salsa, guacamole, or sour cream, if desired. Serve with pico de gallo or a spinach salad for a quick, easy meal. I make it without spices so the kids will eat it, but you can heat it up as much as you like. You can make this lower in calories by using low-fat cheese and cooking spray instead of oil, if desired.Submitted by KARACITA

These make a surprisingly filling meal. Once you get the hang of rolling them, they're a pretty quick one too. Note, the recipe is for one roll, but once you've got the stuff out, you may as well make extra for lunch.Submitted by KARACITA
