Chicken and Lentil Stew

5 quart Dutch Oven, heat 2 Tbsp of oil over medium heat until very hot. Add chicken and cook until browned. Transfer chicken to bowl and cover. Add remaining 1 Tbsp oil to Dutch Oven. Add carrots, celery, onion, and garlic and cook until lightly browned. Stir in curry powder, cook 1 minute.
Add lentils, salt, and water, heat to boiling over high heat. Reduce heat to low; cover and simmer for 20 minutes or until lentils are almost tender.
Stir in stewed tomatoes and brown chicken. Heat to boiling over high heat. Reduce to low, cook and simmer for 20 minutes or lentils are doneSubmitted by NANADUCKY
