Lowfat Sauerkraut Soup

I know, I know...but it is truly good! This recipe drops the calories from the original down to 165.6 per serving instead of 336.1. It is just as good and great for a winter's day.Submitted by MITSRN

Lower-GI Baby Potato Salad

According to the GI Diet, baby potatoes, cooked "al dente", and re-cooled for use in salads are low-GI. Sounds like alchemy/voodoo to me, but I do love potato salad!

This one uses nonfat yogurt, low-fat mayo, cooked, chopped egg whites and finely diced tangy veggies like pickles, radishes, green peppers and whatever strikes your fancy! Adjust as needed... This calorie calculation is for one 1/2 cup serving but the recipe is for four- servings. Submitted by ERICACEAE

Rumbamel's Smoked Sausage Kraut and Apples(crockpot)

I found this in a Taste of Home magazine and used turkey sausage and less brown sugar. It's really tasty! I think some sliced potatoes would be good with it, too. (not in the nutritional info)Submitted by RUMBAMEL

Rumbamel's Creamy Au Gratin Potatoes

My kids weren't sure what these were so I decided to make them. Who wouldn't love cheesy potatoes?! Enjoy!Submitted by RUMBAMEL
