Spicy Red Pepper Pasta Sauce w/ Mushrooms, Red Peppers, & Ground Turkey

Don't let the calories scare you off... This is a super-thick / meal-y sauce! Don't add any salt - the canned sauce needs no additional sodium, and you'll get flavour from the Italian Seasoning! :) [Created 2009-11-14.]

Wolf's Kickin' Chicken Cacciatore

My rendition of classic chicken cacciatore, designed for us bariatric patients and people who want a more reasonable dish. Yes, there is olive oil in it, but its a healthier oil and the flavor that it brings to the dish cant be duplicated otherwise. Enjoy!

Pesto - Vegan

I plant basil every year just so I can make pesto and have enough to freeze it (3 plants is all it takes). The hardest part is washing the basi leaves. Once made, I quickly put it into snack size plastic bags. The only thing about pesto is that it turns brown when exposed to air, so close the bags quickly and keep the remaining pesto covered with plastic wrap while filling the bags.

Italian Baked Chicken and Pastina

I found this on FoodNetwork.com. It's got a very light flavor to it, but at the same time is very flavorful. I love it in the summer, but its good anytime.
