Best Ever Chicken Alfredo

When my family knows I am making this, their friends start showing up.

Mediterranean Atuffed Chicken with Orzo and Roasted Vegetables

Cooking skill: medium/easy

Time required: 4 hours for marination, 60 to prep and cook.

You will need to have access to a Whole Foods store, or else make the stuffing yourself.

This dish is absolutely to-die-for delicious, and great on a hot summer night. It is as packed with nutrients as it is with flavor!

I invented this recipe randomly one night after being inspired by the feta salad I picked up from Whole Foods.

Feel free to sub couscous for the orzo if you prefer.

Pizza Homemade

Makes 6-8 good-sized slices (i.e. family-size pizza)


Can be adapted vegan (no cheese/soy cheese),
vegetarian (rennet-free cheese), or with meat.

Use garlic to flavour if not using cheese (it's like hot bruschetta)

Try half white, half wholemeal flour

Can roll into small calzones if you prefer

Lowfat Alfredo Sauce

Yields 2 cups. 4 Servings at 1/2 cup each.

Basic Risotto Starter

I use this risotto base to start and add any variety of veggies and/or meat. If you aren't adding any additional ingredients, omit the olive oil. I added mushrooms, red pepper and butternut squash last night. Hearty and delicious. Vegetable stock works well too.
