Delicata winter squash is used in this recipe with pumpkin ravioli, kale and the traditional favorites. Packs a PUNCH of good-for-you nutrients.
Both Delicata and eggplant can be cooked with the skin on. Delicata's skin is so soft you can eat it with the squash as it cooks to the same consistency. Eggplant skin is a matter of preference, but it adds a nice consistency and colour to the plate. Makes for a very pretty dish.Submitted by KITHKINCAID
Pound out chicken so it is flat. Dip chicken into milk and then in bread crumbs. Put onto greased baking sheet and bake for 45 min - 1 hour.
Cook spaghetti noodles while chicken is baking. Drain. Put chicken on noodles and top with sauce and cheese.Submitted by GREATERISHE
I never make out of the can sauce I always have to liven it up a bit. I also like using fresh basil and squash but didn't have any this time around. We normally serve over spaghetti squash to keep the calories low.Submitted by JMBARUT

Thsi looked really good so I thought I'd share. There isn't any actual ziti or pasta in it, even though the title says"ziti". I copied the recipe amounts as they were shown on the website, but I'd probably double them since the calorie count is so low.Submitted by JUS911
