Slow Cooker Saucy Veggies & Chicken Sausage

Stewed Tomatoes (per ounce)

At the end of the summer, when the tomatoes are ripening too slowly or not evenly, or going bad too quickly, I'll stew them to use as a sauce, salsa or just a side dish. Works with green tomatoes, too. The meatier the type of tomato, the better, but any kind will do.

This is such a yummy treat! AND because of the size of the meal you trick your mind into thinking you're eating more calories than what you really are! This is an all time fav of mine. I hope you like it!

Biba's Meat Sauce

If using dried mushrooms, soak in hot water for about 15 minutes, or until rehydrated. Pour off liquid and chop mushrooms.

While mushrooms are soaking, spray pan with cooking spray. Heat pan and add onions to sweating stage. Add sausage and pork. Brown mixture, stiring as needed.

Add wine and reduce to about half. Add chicken broth, tomato sauce, tomato paste. Stir together. Add salt and pepper to taste. Turn heat down to simmer and reduce for approximately 45 minutes.

Use for any pasta dish.

Mediterranean Stuffed Chicken with Orzo and Roasted Vegetables

Cooking skill: medium/easy

Time required: 4 hours for marination, 60 to prep and cook.

You will need to have access to a Whole Foods store, or else make the stuffing yourself.

This dish is absolutely to-die-for delicious, and great on a hot summer night. It is as packed with nutrients as it is with flavor!

I invented this recipe randomly one night after being inspired by the feta salad I picked up from Whole Foods.

Feel free to sub couscous for the orzo if you prefer.
