Dissolve yeast in warm water in mixing bowl. Add salt, olive oil and five cups of flour and mix with dough hook on low for 1 minute. Add remaining flour 1/2 cup at a time. Mix until dough started to clean sides of bowl and then mix another 2 minutes. Place dough in greased bowl and sit in a warm, draft free place for about an hour until doubled in bulk. Punch dough down. Brush pizza pans with oil, sprinkle with cornmeal. Press dough across bottom of pan, forming a collar around the edge to hold toppings. Add toppings as desired.
