Chip Chip Funfetti Cookies

My gift for the kids on the last day of school - a tender-crisp vanilla cookie base packed with sprinkles, mini chocolate chips and crushed potato chips too! It's a handheld party! Adapted slightly from http://www.pauladeen.com/recipes/recipe_vi
ew/potato_chip_cookies/ to make it dairy free and a little more "wholesome" with spelt and unrefined cane sugar - like that balances out the potato chips, chocolate and sprinkles!Submitted by JO_JO_BA

Stoveworthy Mac n Cheese

I am not making ANY nutritional claims about this one – we had to do a taste / texture comparison with a “convenience” product (AKA TV-dinner) and this rich, slightly off-puttingly cheesy recipe fit the bill for it. The Velveeta (or processed “cheese” if you want to call it that) gives it the melting, thick velvety quality most people are used to, so it shouldn’t really be left out if you’re not into roux-making.Submitted by JO_JO_BA

Pumpkin - Herb Pizza Dough
Pumpkin - Herb Pizza Dough

This makes enough for 8 mini pizzas or a big 16 incher. I like a really thin crust on my pies so I roll out the dough as fine as I can as soon as it's first rise is done - if you like a "doughier" crust, allow it a 30 minute rest after the first rise and shaping it. I do reccommend a quick par-bake before topping / finishing, no matter what method you use.Submitted by JO_JO_BA

Tarzan Ape - Man Bars
Tarzan Ape - Man Bars

These bars can also be made into a llayered "cake" - just divide the batter between two 8" pans. I think a peanut butter or a cream cheese frosting would be delicious between the layers, or even plain ol' strawberry jam! Sometimes I make two pans and sprinkle the top of one with chopped walnuts for variety and added protein too.Submitted by JO_JO_BA
