Absolutely zero flour goes into these rich, fudgy vegan bites of awesome - the bulk is made up of purple sweet potato (ube), vegan protein powder, ground flax and Ghirardelli Sweet Ground Chocolate and Cocoa. Though this recipe does not rely on eggs for a creamy mouthfeel and scoopable texture, the gelatin takes care of that problem, without the hassle of worrying about it curdling (as many of mine seem to do!).
