Chocolate's Final Bow Cookies

A delicious, decadent and darkly rich double-chocolate cookie that uses olive oil for a chewy treat and espresso for an adult twist. Submitted by JO_JO_BA

Bittersweet Creme Eggs

This is a pretty web-famous, but still delicious, mock-up of the Cadbury treat. You can make deliciously flavoured fillings by changing the extracts (my current favourite is coconut "white" and lemon "yolk"). NI does not include chocolate coating.Submitted by JO_JO_BA

"Terry's Chocolate" Brownies (Gluten Free)

Eggs do double duty as leavening and binding in this bean-based, dairy free cake. Orange juice as well as a stevia baking blend add a touch of sweetness to counter the bitter cocoa.Submitted by JO_JO_BA

Fantastically Fruity Rice Pudding

I wanted to make the toddlers at school something pink in honour of Valentine's Day, since the older kids were getting a taste of my Red Velvet Popcorn. Leftover sushi/sticky rice, a mix of stevia and sugar, whole milk and a few beaten eggs cooked together into a creamy mix that got a punch of colour, flavour and nutrition from frozen raspberries!Submitted by JO_JO_BA

Rich Cocoa Custard

Delicious, low - fat and dairy - free, made with fat free soy milk and cornstarch for a delicious and thick pudding mix great for filling cakes or cannoli shells! Serving size is 1/2 cup.Submitted by JO_JO_BA

Heavenly Baked Crullers with Cherry Glaze

Adapted from Marcy Goldman's A Passion For Baking, this takes the often deep-fried French Cruller doughnut and bakes it before dunking it in a beautiful pink glaze. You can substitute shortening for the butter if you wish. Using "bread" or "strong" flour is very very important here... the gluten needs to develop fully to trap the air pockets inside.Submitted by JO_JO_BA

Spinach-Stuffed Shells

Adapted from Fresh and Healthy DASH Diet Cooking: 101 Delicious Recipes for Lowering Blood Pressure, Losing Weight and Feeling Great by Andrea Lynn. These creamy, cheesy shells are cloaked in Cheddar, mozzarella and low-sodium tomato sauce. I used goat dairy (easier to digest) and changed proportions of the basic elements to use what I had on hand.Submitted by JO_JO_BA

Chickpea Choco - Raisin Chippers

You know you should be eating more legumes, but the chances of getting a kid to tuck into a bowl of beans are generally slim to none! But try getting anyone especially a child to resist a cookie!Submitted by JO_JO_BA
