Moist, tender, a little bit of heat with a cheesy center in a honey cornbread, you will not believe this delicious treat is only 95 calories per serving and a great source of potassium.
Perfect by itself or with soup/chili. Extremely satisfying.

Kasey's Black & White Chicken Chili

Very hearty and satisfiying dish that doesn't feel like your eating low calorie. I top it off with fresh chopped Cilantro and fat free cheese or sour cream and a dash of lime juice.Serving size is 1 cup.

My Favorite Slow Cooker Potato Soup

This is a great soup and quite hearty to warm one's soul. It makes 18 servings and is even better the next day.

Since our family has to watch sodium for medical issues, we do not use chicken soup base or bouillon when called for and instead use homemade chicken stock. By doing so we can control the sodium as needed. This recipe's nutritional info is if you are using homemade stock/low sodium homemade stock.

You may also cut back on the fat by using a substitute for the butter and/or cheese if you wish. We opted for Smart Balance Buttery Lite Spread for this recipe and nutritional info.

Remember the cooking time is 5 Hours on High or 8 Hours on Low in your Slow Cooker.

Please see the bottom of instructions if you wish to use chicken base instead of stock.

Wolf's Kickin' Chicken Cacciatore

My rendition of classic chicken cacciatore, designed for us bariatric patients and people who want a more reasonable dish. Yes, there is olive oil in it, but its a healthier oil and the flavor that it brings to the dish cant be duplicated otherwise. Enjoy!

Nancy's Easy Tzatziki (Greek Yogurt Sauce To Die For!)

I fell in love with tzatziki the first time I tried it and was on a quest to find the recipe that included those ingredients that pleased my particular palate best. This recipe is low-fat, high-protein, nutritious, smooth, Mediterranean, refreshing, light, and hopefully the best you've ever had! Two things to remember are to strain any plain yogurt that is NOT Greek yogurt (see info below) and to soak the cukes, so a lot of the water is removed to avoid the sauce becoming too runny and thin. Be creative with it! I use it on a hot baked potato, as a dip for fresh veggies instead of that ol', tired, onion soup and sour cream staple, as a salad dressing, or as a sauce to add protein and great flavor to any complex carb.
