Hint: If you can't find the canned "diced tomatoe & green chillies" simply substitute w/one tomatoe and another quarter of that jalapeno pepper.

Best part of this recipe is it's not an exact science. Eyeball it and play w/the vinegars! I prefer more cilantro & jalapeno for a more "Mex" and less "Tex" taste!
A tasty comforting dish full of nutrients but low calorie.
This is a meal in itself, and a filling one at that! I used cod but I'm sure any kind of fish would work like tilapia or even salmon. The tortillas I use are way better warmed than other store bought corn tortillas. They are almost like flour tortillas.
