Have you ever had that wonderful white trash taco salad made with Doritos, taco meat, tons of cheese and an entire bottle of Catalina/French dressing? Oh yeah, I believe there may be some lettuce in there also. I personally love the stuff but DONíT love the calorie count (I calculated it at over 1,000 calories per serving!!). I prefer to splurge on dessert and tend to choose healthier options for my meals.
Well, I donít see why I canít have my cake and eat it too, so I took that atrocity of a ďsaladĒ and turned it into something I could feel good about eating on what is now almost a weekly basis. It has become one of my favorite go-to meals b/c itís easy and so tasty. Plus, I like big portion sizes and the bulk of the lettuce allows you to get a big plateful for about half the fat and calories of the original recipe. Now thatís what Iím talkin' 'bout.
Love this! Make it almost once a week. I ended up using a cup of frozen corn kernels I had and it turned out well. Use any extra veggies you like. I also make the biscuits a little smaller than fourths, just tear with my hands.
The original recipe serves 8, but we love it so much we get about 6 servings out of it instead. Oops!
