I created this recipe to reflect my love of cheesecake and pumpkin pie. You can add or subtract the amount of spices; I happen to like it quite flavourful. As with pumpkin pie, it tastes better a day later..... There is no flour or salt in this recipe and the calories are minimal with the protein content being high. I have been making this version of hummus for a long time now with rave reviews, even though I do not add tahini - to me, the sesame flavor can overpower the other flavors I love so much. Add some coarse ground black pepper for a little variety, or sun dried tomato flakes. Goes well with whole wheat pita bread and tabouli, to make a healthy sandwich.
