This is a great recipe to make at the beginning of the week. Divide it up into 6 servings and you have lunch for the entire week. Great on the go food if where ever you are going has a microwave. ;-)

The flavors of the two kinds of meat intermingle to create a delicious new flavor. This recipe is said to come from an old Amish recipe. Roasts should be of equal size, plan on 3 oz of each per serving. Using 2 lb. roasts will feed about 10 people. Use equal portions of beef and pork roast any cut, total weight depends crowd size. cooking time depends on size of roasts. A beef rump roast and pork shoulder of same weight work well.Submitted by USAPRIDE1969
Preheat oven to 350 degrees.
Chop 1 medium green pepper. Shred 1 medium sized carrot. Chop 1/4 cup onion.
Brown ground beef, drain. Add in vegetables and BBQ sauce. Continue cooking about 5 minutes or until peppers and carrots are cooked. Stir and remove from heat.
Using cupcake pan, press biscuits into holes and flatten to bottom and sides. Spray with cooking spray to avoid sticking.
Spoon meat mixture into muffin cups. Press down with spoon to fill. Use entire mixture.
Bake for 10 minutes at 350 degrees. Remove from oven. Sprinkle cheese on top of each muffin cup. Bake another 3-4 or until cheese is melted.

I wanted to make enough to freeze so I could have a cup or two a day for a couple weeks, just pull out and heat up! SO GOOD!
