A Chili Without a Name
A Chili Without a Name

A Chili loaded with fresh bell peppers, jalapenos, sweet potatoes, and baby reds. More color = more nutrients. Because there is so much in here that comes from the produce section, it is WAY better if you buy them fresh. However with the beans, corn, and sauce, I used canned.

Roast Lion (Beef & Pork Roasted together)
Roast Lion (Beef & Pork Roasted together)

The flavors of the two kinds of meat intermingle to create a delicious new flavor. This recipe is said to come from an old Amish recipe. Roasts should be of equal size, plan on 3 oz of each per serving. Using 2 lb. roasts will feed about 10 people. Use equal portions of beef and pork roast any cut, total weight depends crowd size. cooking time depends on size of roasts. A beef rump roast and pork shoulder of same weight work well.

Lasagna Makeover
Lasagna Makeover

A fresh take on a classic Italian dish. Instead of lasagna noodles, we're using whole wheat spiral pasta. We're also using a very lean ground beef (or try ground turkey to reduce the fat some) and add in your favorite veggies.

Craftske Nook Chili for a crowd!
Craftske Nook Chili for a crowd!

or someone that doesn't want to have to cook every meal three times a day to get the right calories! heehee I meant to use turkey but the pork butt roast was on sale this week! I wanted to make enough to freeze so I could have a cup or two a day for a couple weeks, just pull out and heat up! SO GOOD! Cut even more calories by doing it with the original turkey and instead of some of the sauces add some more veggies and maybe some low fat no broth salt! the peppers and onions carry it a long way!!!

Mexican Birria (4 oz)
Mexican Birria (4 oz)

Don't forget to roll that R!!! Birria (beer-ee-a) is a traditional Mexican meat that is used for large celebrations. The first time I tracked down a recipe it started with "take 100 pounds of beef..."! I have reduced the amounts, but the ingredients are authentic. Serve with flour tortillas & Juchipila Mexican Rice.

Korean Style Beef Patties
Korean Style Beef Patties

This is a typical Korean meatball that can be eaten with rice or in a sandwich with lettuce or a salad with bean sprouts and broccoli. It can be a great appetizer or party food. Kids love it and it's low fat. You can add your own combination of minced vegetables to mix it up.
