I wanted to make some blueberry muffins and after looking at my favorite muffin recipe I was amazed at how many calories (262 per muffin) and how much fat (9g per muffin) were in the muffins so I altered the recipe by replacing the butter with apple sauce and replacing one of the eggs with 2 egg whites. Hopefully you'll enjoy these muffins as much as I do and won't feel guilty while eating them!
p.s. This recipe is for 12 standard size muffins, I like to make 24 mini muffins so when I get a snack craving I can just grab a little one to satisfy my munchies.Submitted by BUZZ780
