Skinny General Tso's Chicken

I love General Tso's chicken but needed less fat and calories without sacrificing the taste. This satisfies that craving in a healthier way. However this sauce mix contains MSG and is not gluten free.
Wonderful served with wild or brown rice and a salad.

Anni's Moussaka with Ground Turkey

This is NOT an authentic Mousakka but it is delicous!
The recipe comes from my best friend Anni.
Using a leaner turkey would decrease the fat and calories in this recipe.
Anni's recipe calls for 3 medium eggplants.
We increased the amount of Cinnamon from a pinch to a teaspoon to our personal preference.

Spinach Alfredo Chicken

Something I made up that rocked. I made this a one dish meal by browning chicken in butter adding water to just cook spaghetti, but not too much so it would evaporate by the time the noodles were done. I also used fresh spinach but I am sure that you could use frozen and add in when spaghetti noodles were half done. This worked nicely for me, but I was just experimenting with what I had around the house. Submitted by AMYFALKE
