Black Bean and Corn Salad

A gal brought this to a potblessing meal at the church. It disappeared quickly! If you add more or less mayo or more chips, adjust the calories accordingly. Adding a tbsp. of cumin and some red pepper would give the salad a little kick.Submitted by PANSYLADY2

Macaroni Salad w/Shrimp

This is a large recipe I make for my church gatherings. Makes 48 - 1/2 cup servings for a total of 24 cups.
This is a basic salad recipe that can be changed to make it lower in calories and fat. I put it in as I always made it before my weight loss journey began.

Marilyn's Quinoa Salad

This is a mixture of quinoa and chopped vegetables with lemon juice as a dressing. I eat this as a healthy filling lunch or snack.
I add black or kidney beans for added fiber, but they are not figured in the calories, so I add them after I measure my portion and calculate them seperately.Submitted by 192LBMARILYN

Greek Salad

A greek salad with a few small twists. Very filling without some of the extra calories or added salt. No olives to keep the sodium down.
Salad is good that day and also the next.

creamy non-fat thousand island

Makes a creamy dressing for salads. Use it on a crab louie. Add fresh salsa for a taco salad, add pickle relish for a traditional thousand island, or ad some cajun spice to kick it up. It's a low fat take off the original recipe my grandmother got from a chef at a popular seafood restaurant years ago. The Fage replaces mayo since low fat & no fat mayo have an aftertaste. I found a recipe here on Spark submitted by ELAINEHN that sounded really good, except the dressing (for me I don't really like super-creamy dressings and with buttermilk AND mayo in it it would have been too much).
