A gal brought this to a potblessing meal at the church. It disappeared quickly! If you add more or less mayo or more chips, adjust the calories accordingly. Adding a tbsp. of cumin and some red pepper would give the salad a little kick.Submitted by PANSYLADY2

This is a mixture of quinoa and chopped vegetables with lemon juice as a dressing. I eat this as a healthy filling lunch or snack.
