12 Texas sized bran muffins
I modified and combined several bran muffin recipes to create one my dad likes. I accidentally left out the oil one day, and they're less crumbly than they would be otherwise. If you'd like a more tender muffin, add 4 Tablespoons of oil of your choice or butter. Submitted by COOKING42
Use two mini-muffin pans (24 wells each) to make little bitty brownies. Use a small cookie dough scoop (Mine's by Oxo) to scoop just the right amount of batter into the little cups.
(These have no nuts or chocolate chips, I'm not sure what adding them would do to the portion control or the calorie count.)Submitted by COOKING42
In total the recipe makes 500g of candied nuts; or 25 - 20g servings. Not a huge amount but a little somthing sweet and crunchy to go with coffee instead of a cookie over the holidays. Healthier for you too than cookies.
