Nutritious and filling.
More than 30 years ago, at the Reading Rock and Jazz Festival, I bought a bowl of vegetarian bean soup from one of the stalls. It was the most delicious soup I had ever tasted. Over the years I have tried to create a recipe that stands up to my memories and would like to share it with you here.
In addition to the preparation and cooking time you will need to allow time to soak the beans.
Although I have added this to the Appetizers and Soups category, this is really a [light] meal in itself.
The name has a double meaning: the word 'Festival' is a reminder of the inspiration for this soup and also refers to the colourful beans which look so festive in themselves!

A variation of CAAM76's Slow Cooker Split Pea Soup. This is a tasty split pea soup that would lend itself to a lot of flavors. Next time I make it, I want to replace the liquid smoke and lemon with curry powder.Submitted by JOLENE662
