Very flavorful and filling for not too many calories. Using hull-less barley (as opposed to the processed "pearl barley") increases the fiber and protein content of this soup and qualifies as a "whole grain." Cooking time increases a bit more because of this - but soaking the barley in warm water helps reduce that time. Enjoy!
A great mainstay for getting well or cleansing. It will only accept cooking time in minutes, but I simmer for 8-12 hours at least. This soup was my turning point fighting bad cold/flu bugs a couple of times. You can also divide pot and for heftier or non-dieting apetites, add dumplings or noodles. Helps you stay on lighter meal while feeding family.
I havea large family and therefore cook in large quantities -- this recipe can easily be cut in half in you like. Or make it all and freeze half. This is one of those recipes that almost tastes better the second day, after it is reheated.
