Low Sodium Split Pea Soup with White Wine

makes 8 servings 1.5 cups each
may be made in large pan, dutch oven or crock pot

assemble 1 large onion, 2 stalk celery, 2 carrots, 1 red bell pepper, 3 cloves garlic. peel carrot, remove skin from garlic and seeds from bell pepper. Chop all. Can you food processor if available.
Put dutch oven or pan on stove, add 3T olive oil and chopped vegetables. saute veggies until aromatic and soft. (You can now switch to crock pot if desired)
To sauted veggies, add 1 cup white wine, 12 cup water, split peas (I use yellow), ham hock and herbs. I use fresh herbs on stem tied together if I have them. Stir. Bring to boil, then reduce heat to where soup is just lightly bubbling (simmer) for 2hrs. till thick, but still a little watery. (you can add extra water if needed).
Remove ham hock to side to cool. peel and dice potates and add to soup. simmer till potato tender, approx 30min. turn off heat, cover.
pull meat off ham hock and shred, add back to soup. stir. Soup should be thick and creamy. if still watery, simmer for longer period until thickness desired. Add pepper (salt if desired, but will increase sodium) and serve.Submitted by SMGINDY
