This soup is so hearty and flavorful, once you try it you will never go back to canned tomato soup. And best of all, it's fairly simple and quick to make. Try a bowl with one of my Rosemary Olive Knots and a side salad. (Note that you can also easily make this a vegetarian recipe by substituting vegetable broth for the chicken broth.)
My version of a popular Italian chain restaurant's delicious soup. Skim milk was used in place of half and half to lighten fat content...still absolutely delicious!
This came out of the Nov/Dec 2010 Vegetarian Times. It is an awesome recipe, perfect with no alterations. The preferred squash to use is called Red Kuri and is worth the effort to look up if you don't know what you are looking for at the grocery store. The recipe says you can use other winter squash, too, I just haven't done it yet. As with most pureed soups without a cream base this freezes beautifully. Also, this is a bit time consuming to make, but so worth it!!
