Making your own bread cubes is easy and yields delicious results. You can prepare the toasted bread cubes two to three days before Thanksgiving; store at room temperature in a zip-top plastic bag. If there's space in the oven, bake the stuffing while the turkey roasts. Otherwise, bake it in the morning, and reheat it while the turkey stands.Submitted by GEM1NI
An incredibly easy, really healthy dip! Just roast the squash and toss it all in the processor!
The consistency of the squash once roasted is smooth enough that lots of oil isn't necessary to hold the chickpeas together.
Also great as a sandwich spread - especially with leftover turkey!
Best with local produce ;)Submitted by WANDERLUST12
Altered from "Downeast Maine Pumpkin Bread" on Allrecipes.com to make it a little bit healthier. This is delicious with a cup of coffee or just a light dessert! Even with applesauce substituted for the majority of the oil, it's super moist and keeps well. Submitted by STARSTEALING

Adapted ever-so-slightly from http://joanne-eatswellwithothers.com - I doubled the lentils (by accident - oops, but it still tastes awesome), I upped the garlic, and I subbed out the jalapeno with cayenne. Delicious! Too hearty to just be a soup course. :)Submitted by SHAKINGTHETREE
