Cracklin' Cornbread- Down Home Recipe
Cracklin' Cornbread- Down Home Recipe

Cracklin' Cornbread is one of my family's Thanksgiving tradition.

Cracklings are pork skin that is fried until the fat is rendered off leaving tiny crispy pieces of skin.

You can substitute it with fried bacon. But beware! High Calories! Submitted by VEHAMILTON1

You can grill or pan fry your streaks.Submitted by VEHAMILTON1

Dressing (Stuffing)

My Mom's recipe has always been my favorite but I didn't want to have to abstain so I lightened it up by changing pork sausage meat to lean ground pork and eliminating the 1 cup of butter her recipe called for to be poured over (I used chicken stock instead and it worked just fine). The spices absolutely make this recipe delicious. You truly won't miss all the fat.Submitted by DANCEMOM1970

Raccoon - Down Home Dinner in a Crock Pot
Raccoon - Down Home Dinner in a Crock Pot

Seriously, I may not be Granny on the Beverly Hill Billies, but I am a country girl who knows how to cook and loves to eat wild game.

And raccoon is no exception. Cooked slowly in a Crock Pot, this makes a very good meal.

Secret: Cut gamey taste by using Whole Cloves. Submitted by VEHAMILTON1

Dad's Fantastic Pork Stuffing

This is not a light dish by any means, but it is delicious for a holiday treat. Dad makes this stuffing for Christmas and Thanksgiving every year. It can also be baked in a pan in the oven but it is much better when stuffed in a turkey.Submitted by LORANNEBRONZE
