Here's the breakfast porridge that I eat most mornings. I was taught a variation of this recipe and was told it came from a vegan cookbook that I can't remember the name of.
The original recipe calls for 2 T raisins instead of the blueberries, but we have a ton of blueberries in the freezer, so I've been using those recently and really like it. There are lots of variations--I've done with and without the flaxseeds, used chopped almonds instead of the sunflower seeds, dried cranberries instead of the raisins/blueberries, added some dried coconut... I think the original recipe also says you can add amaranth to the grain mixture as well.
I usually put 2 T milk or soy milk on it.Submitted by JANNABB
I picked this recipe up on a backpacking/horseback riding trip to Patagonia, Chile. Patagonians eat super fresh foods like avocados. carrots, and shellfish that are regionally available. And they're delicious!
