Roasted Red Pepper Hummus ala Coach Nicole's version

I added some roasted red peppers to Coach Nicole's very good hummus recipe. The red peppers are very 'wet' so thinned the hummus quite a bit so I had to add more chickpeas just to thicken it up. Next time, I might omit the water. The peppers give a nice sweet flavor to the hummus.
Also, I start with beans that I've soaked overnight & cooked. You could get a slightly smoother texture if you had the fortitude to 'skin' the chickpeas. If you cook them from their raw state, this will become clear.Submitted by CHARITYCYCLIST
